Summer Torte



This cake is the easiest to bake - Trust me! Last summer, my friend Kendra invited Rob, Benja and I to her house for a BBQ. Being the terrific host that she is, Kendra brought out a homemade dessert at the end of the meal that we devoured! I had to have the recipe for the summer fruit Torte so that I could share it with you too! 

The recipe that Kendra gave me is for a Plum Torte but the ripe peaches in my kitchen were calling my name, so peach it is! I added  ¼ cup of water to the recipe because I like the torte to be airy and wet. If you prefer more of a dense torte, omit the 1/4 cup of water.



¾ cup of sugar

½ cup of room temperature soft butter

1 cup of flour

1 pinch of salt

1 teaspoon of baking powder

2 eggs

5 peaches

¼ cup of water

¼ cup of sugar (for the end)

½ limen juice


Preheat the oven to 350 degrees Fahrenheit.

Mix ¾ cup of sugar and ½ cup of soft butter with a hand mixer. Add 1 cup of flour, a pinch of salt and 1  teaspoon of baking powder to the mix. Next, add 2 eggs one by one and finish adhering ¼ cup of water. Mix well.

Add the batter into an 8 or 9inch greased springform pan. (I used a regular pan with parchment paper)

Place the sliced fruit on top of the batter, sprinkle ¼ cup of sugar and the juice from ½ a lime. You can also place the fruit in the pan first and add the batter last - up to you.

Bake for 1 hour, until your toothpick comes out clean!
